  • While whipping the egg whites, do it slowly, so that the beaten egg whites and the later the meringue is glossy, soft and dense
  • The whipping speed needs to be increased only when the sugar is added. This will allow meringue to achieve stiff peak
  • When blending the meringue with the beaten egg yolk, don’t mix all of it at one go. First add half, lightly whisk it and then add the remaining. Take ample care not to over-mix and deflate the batter
