While many flock to Japanese restaurants to have a bite of it, many even prefer cooking it at home. Its recipe is not at all tough, just that a bit of patience is required. Generally to attain its jiggly and tall structure, a ring mold is used. However, if you don’t have one at home, don’t worry. Today we will discuss how to prepare fluffy Japanese pancakes without a mold.

Ingredients (4 servings):

2 egg yolks

½ cup milk (120 mL)

4 egg whites

¼ cup sugar (50 g)

¾ cup pancake mix (95 g)

Butter, syrup and 1 cup assorted berry (175 g) (serving purpose)

When You Don’t Have a Mold:

Wrap an aluminum or tin foil around a regular sized can and fold it until it becomes strong. 1.5 inches height will serve your purpose. For fine finishing tape it at the top, in a manner that the foil stays together and does not fall off. Plus don’t forget to either wipe or spray the inner portion with oil, prior to filling the pancake batter.

Method:

Take a huge bowl and blend the egg yolks with sugar, milk and pancake mixture, smoothly without leaving any large lumps

In another bowl, whisk the egg whites separately, until peak forms when lifted

Next, carefully fold the beaten egg whites with the previous mixture and blend everything evenly. However take note not to deflate the batter

Now grease the home-made foil rings and place them in middle of a pan that is on lowest flame

Start filling the rings a bit more than half and cover the pan to be cooked for 10 minutes. Don’t remove the pancakes until the centers are somewhat jiggly

With help of a spatula, lift the pancakes from the bottom and then flip them carefully, assuring not to disturb the inner batter

Cover and cook for another 5 minutes

Once cooked completely, transfer the fluffy Japanese pancakes into a plate and relish them with syrup, butter, berries or other organic fruits of your choice. If you wish you can also replace butter with freshly whipped cream.
