1. Use of Cake Flour:

Although all-purpose flour is used to prepare a pancake, preparing a soufflé pancake from cake flour will show delighting results.  Cake flour is delicate and finely milled, making it the perfect ingredient for higher rise and tender crumb.

2. Cold Egg Whites:

In order to assure an airy texture and also to maintain that airiness when they are folded into the batter, it is essential to whip egg whites that are cold and not at room temperature.  

3. Neither under-whip nor over-whip:

Under-whipping or over-whipping will not allow the batter to rise to its desired height.

6. Skillet Type:

It is always advisable to use a skillet that is non-sticky, large and possesses tight fitting lids. Furthermore, before cooking, heat the skillet on medium-low flame and grease it with butter.

Owing to its delicate nature, care should be taken to gently flip the soufflé pancake while cooking and also while transferring it to the plate. Handling them roughly will spoil the effort you had put in.

8. Toppings:

Once done cooking, you should also have a good idea about the add-ons that generally accompanies a soufflé pancake plate to enhance not only its appearance but also its taste. While maple syrup is the most common one, you can also go for sliced fresh fruits, dollops of whipped cream, sugar dust and etc.
