How to Make Crème Brulee Pancakes

Mentioned below is the recipe of a crème brulee pancake. Follow each step carefully to craft out the most deliciously fluffy pancake of your life. INGREDIENTS:
1.  Crème Sauce –
  • Milk – 6 tablespoons
  • Egg yolk – 1 (large)
  • Sugar – 2 tablespoons or 25 grams
  • Flour – 1 tablespoon or 10 grams
  • Butter – 2 tablespoons (room temperature)
2. Yolks –
  • Yolk – 1 egg
  • Sugar – ½ tablespoon
  • Milk – 2 tablespoons
  • Flour – 3 tablespoons or 30 grams
  • Baking powder – ¼ teaspoon
3. Whites –
  • Whites – 2 eggs (large)
  • Tartar cream – 1/8 teaspoon
  • Sugar – 1 tablespoon
METHOD:
  • To prepare the crème sauce; first blend the egg yolk, flour and sugar until the mixture becomes smooth. Whip it up with milk and pour it into a small pot. Heat it on medium flame for the custard to thicken up. Remove from the flame and add butter. Now set it aside
  • Mix 1 tablespoon of sugar with the egg yolk and let it become pale and frothy. Blend the milk in batches. Transfer the baking powder and flour to the yolk mixture and beat it well so that everything becomes incorporated
  • Beat the tartar cream and the egg whites until pale and foamy. Also keep adding bits of sugar in between, till the whites become glossy thick meringue with a peak. Take care not to overdo
  • Mix 1/3 of the whipped whites with the yolk mixture. Add half of the remaining whites and whisk into the yolk batter, being careful not to deflate. Transfer the egg yolk mixture to the remaining egg whites, whisk and then use a spatula to fold together
  • Heat a non-sticky pan. Carefully brush it with oil and rub it around with a paper towel
  • Scoop out ¼ cup batter into the pan. Cover and cook for 3 minutes.
  • Remove the cover and pile the pancake with more scoops. Cover and cook for another 3 – 4 minutes. Use a spatula to carefully peek the pancake base. The pancake should release easily. But don’t force if it doesn’t
  • Repeat the process with remaining batter
  • Once the pancakes turn golden and are cooked well, transfer the pile into a plate. Add crème sauce and sugar sprinkles on top. With a cooking torch brulee it.
